Indian food

Many of us associate Gujarat only with dhokla, khakra or the drool-worthy Gujarati Thali. But there is more to Gujarati food than that. North Gujarat, Kacch, Kathiyawad and Surti Gujarat are four main regions of Gujarat and each of them brings its own uniqueness to Gujarati cuisine.

1. khaman

A delicious and healthy steamed morsel produced with crisp ground lentils and chickpea flour, it is fundamentally the same as its unpretentious cousin, the world renowned dhokla. To set the khaman, the khaman flour mixture is bubbled together with the turmeric, salt, and pop preparation to make it light and smooth. It is then cut into blocks and usually garnished with mustard seeds, coriander leaves, sev and chopped onions. Usually served in a huge green leaf called Kesuda, the advanced urban form is daily served in farsan (snack) shops with tart chutneys and a few chunks of green chillies. The main settings of the khaman include Ameri khaman (pounded khaman garnished with sev and pomegranate), Nylon khaman (milder, quick-cooking khaman) and Masala (khaman presented with hot and spicy powder).

No Gujarati venture, picnics, outdoor walks or even business trips are complete without this ubiquitous morsel. Produced with gram flour, whole wheat flour, fenugreek leaves and crunchy flavors, these flatbreads are good snacking options with a long lifespan of realistic usability. Usually served sizzling with cuajada nuevo, pickles or chundo, they are healthy dinners. When they come together with some hot tea, they also make a luxurious breakfast or amazing snack in the middle of the storm. Although methi (fenugreek) is the most popular, other varieties include palak (spinach), amaranth or muli (radish) theplas, especially suggested for individual eaters.

3. Khandvi

The Gujarati lord of dishes Undhiyu (and obviously Uttarayan) is the motivation behind why a Gujarati eagerly anticipates winter. He gets his name from the Gujarati word ?undhu?, which means rearranged, it is an established Gujarati dish made in an inverted earthen pot. Named for the activity used to shape the mixture, these clenched-handed cakes make an extraordinary breakfast or late-night snack. When you take some fiery, salty, crunchy fafda and eat it with some crunchy, sweet jalebi, you are sure to be in nutrition heaven. Take a chilled fricasseed or a whip of dried papaya chutney with this concoction, and your taste buds will soar to greatness. Relatively every road corner in Gujarat, esp. Ahmedabad has a store that offers these. On Sundays, there are tremendous queues outside the farsan shops, for a liberal breakfast from this eminent team.

8. Lilva Kachori

Kachoris are small balls made of flour and loaded with any filling of your choice. They are a famous delicacy in the western and northern part of India. Lilva Kachori is Gujarati forte, made with a stuffing of pigeon peas. To prepare them, the kachori dough is prepared from white flour and semolina, peeled off and loaded with the lilva mixture (pigeons, green chilies, cilantro and flavors), rolled into balls and then cut into fricas. A signature dish of many Gujarati families where each housewife adds her own unique twist to this traditional formula, Mohanthal is a sweet fudge-like confection made from sweetened gram flour (besan) and seasoned with saffron, cardamom and nuts like almonds and pistachios. A basic and unappealing treat for the sense of taste, it is said to be Lord Krishna’s most beloved sweet and is subsequently lovingly prepared in the midst of the Janmashtami celebration. Although it is a conventional confectioner, it is sometimes more willing to fulfill those inauspicious sweet wishes. It can also be stuffed as a lunchtime snack and can be found in every mithai store in the state.

This is an effort to say just a portion of the dishes for which this gourmet state is well known. There are a few different dishes like patra, dabeli, doodhpak, dal dhokli, bajri no rotlo, locho, sev usal and dahi tikhari among others that deserve a good description.
